New Meal #2: Healthy Kung Pao Chicken

Those who know me well know that Kung Pao Chicken is my absolute favorite meal, so it's kind of crazy that I never knew how to make it until today! I saw this recipe on Pintrest and thought well, it's meant to be! It was delicious, surprisingly cheap to make (compared to how much I spend on take-out) and it was simple enough.

Here it is:

2 large chicken breasts, thinly

sliced

2 tablespoons garlic, minced

2 tablespoons sesame oil

1-1.5 lbs green beans

2 tablespoons of soy sauce

1 tablespoon sriracha

1 tablespoon chili paste

1 tablespoon honey

Salt and pepper to taste

1 teaspoon sesame seeds (optional)

Crushed peanuts & cashews (optional)

Directions:

  1. Prep chicken by seasoning with salt and pepper and slicing it thin. Set aside.

  2. Prep the green beans by cutting off both ends. Set aside.

  3. Prep stir fry sauce by mixing together the soy sauce, sriracha, chili paste, and honey.

  4. Place 1 tablespoon of sesame oil and 1 tablespoon of minced garlic in a large pan or wok. Turn to high medium/high heat.

  5. Add in chicken and saute for about 5 minutes, or until partially cooked. Remove chicken and set aside.

  6. Place another tablespoon of sesame oil and minced garlic in the pan and turn to high heat. Add in green beans and saute for 5-7 minutes or until they begin to soften.

  7. Add in the chicken and continue to cook for about 5 more minutes until chicken is fully cooked.

  8. Add stir fry sauce and reduce heat to low/medium and let cook for a few more minutes

  9. Add in sesame seeds and let sit for 5 minutes so that the sauce can thicken.

  10. Serve hot.

Prep Time= 5 minutes

Cook Time= 20-25 minutes

Total Time= 25-30 minutes
