New Recipe #2: Slow Cooker Thai Peanut Chicken

January's challenge is bringing back the New Recipe challenge. Basically I will learn a new recipe or meal each week and post it here on the blog! I love these recipe challenges because they get me to try new meals and ideas. So let's get to it...

My second meal is a slow cooker Thai Peanut Chicken dish! I love Thai food, like I cannot stress how much I LOVE Thai food... So whenever I see a new Thai recipe I like to do my best to try it. This one was definitely a hit. I changed the original recipe slightly to cut down on sugar and will post my version below along with a link to the original. If you want to add some heat, try adding Sriracha, I did and LOVED it!

What You'll Need:

2 cloves garlic, minced

2/3 cup peanut butter

1 cup chicken broth

12-16 oz. chicken breast

1 cup shredded zucchini

1/3 cup soy sauce

1 red pepper cut into thin, long slices

1 lime

1/2 cup chopped cilantro

1 cup white rice

Instructions:

1. Wash and dry the zucchini, pepper and chicken. Shred the zucchini, chop the pepper and chop the chicken into 1" cubes.

2. Add garlic, peanut butter, broth, chicken, zucchini, soy sauce, and pepper in the crockpot and stir to combine.

3. Cook on low for 4-5 hours or on high for 2-3 hours. Once cooked, add lime juice and cilantro and cook for another 30 minutes.

4. Serve over rice and garnish with cilantro and peanuts (optional).
