Self-Love Recipes: Spicy Honey Lime Chicken

In February, I like to celebrate self-love and practice anything and everything that celebrates loving oneself. This February I'm trying out 4 NEW recipes to love your body with! Next up, Spicy Honey Lime Chicken.



What makes this a recipe to love yourself with? The unique flavor profile is delicious and it's a great protein-packed recipe!


What You'll Need:

  • Marinade

    • 16-20 oz. Chicken Breast

    • 3 Tbsp Soy Sauce

    • 3 Tbsp Honey

    • 1 Tsp Lime Zest

    • Lime Juice from 1 Lime

    • 1 1/2 Tbsp Garlic

    • 1 Tbsp Fresh Grated Ginger

    • 1 Tbsp Olive Oil

    • 2 Tbsp Sriracha

  • Side Veggies

Instructions:

  1. Marinate the chicken for at least 2 hours but up 10 hours. Combine marinade ingredients and whisk (or blend) until smooth.

  2. Cut chicken into 1 1/2-2 inch cubes then add to a plastic bag to marinate. If marinated for more than 6 hours, wait to add the lime juice and lime zest until 30 minutes before cooking.

  3. When ready to cook, set aside your chicken to come up to temperature.

  4. Wash and prep your veggies.

  5. Heat olive oil in a pan for 2-3 minutes, then add in the chicken.

  6. While the chicken is cooking, heat olive oil in your wok and add in the veggies to start stir frying. Stir occasionally.

  7. After 6 minutes of cooking stir them around and flip then cook through for another 5-7 minutes. Avoid stirring the chicken pan so the sauce has time to simmer and cook off any extra water.

  8. Once the chicken is cooked through, pour the sauce and chicken into the wok and combine. Let all simmer together and finish cooking through for another 3-5 minutes (or until the sauce is your desired thickness).

  9. Serve over rice and enjoy!
