New Meal #1: Mexican Quinoa

For my first meal I did a One Pan Mexican Quinoa. Overall I felt it was really simple and a great first meal for me. Generally, I cook chicken and veggies or breakfast, so it was a fairly easy transition. Additionally, it tastes amazing!! It's difficult to believe I'm actually eating quinoa, because it tastes very similar to a Chipotle burrito bowl. Here is the recipe and directions:

4 Servings

1 tablespoon olive oil

2 cloves garlic, minced

1 jalapeno, minced (optional)

1 cup quinoa

1 cup vegetable broth

12 oz diced chicken breast (optional)

1 (15-oz) can black beans, drained & rinsed

1 (14.5 oz) can fire-roasted diced tomatoes

1 cup corn kernels

1 teaspoon chili powder

½ teaspoon cumin

Kosher salt and ground pepper, to taste

1 avocado, halved, seeded, peeled and diced

1 lime, juiced

2 tablespoons chopped cilantro leaves

Directions: After prepping and chopping all of your veggies, simply throw everything into a pan or skillet and cook. If you use chicken also, make sure to cook that in a separate pan!!

Prep Time= 5 minutes

Cook Time= 15-20 minutes

Total= 20-25 minutes
