Happy Cinco de Mayo: Healthy Taco Bowl
Cinco de Mayo is one of my favorite days of the year, because Mexican food, music and tequila - some of my favorite things. The holiday celebrates Mexico's victory over France in 1862 at the Battle of Pueblo and is a great time for people to come together and celebrate their favorite things.
Mexican food is not known for being the healthiest food out there, but I have my own taco bowl recipe that is to die for and also healthy! It's been a hot-minute since I've done a recipe and I figured this would be a great time to get one on here, so here it is:
Prep Time: 10-15 Minutes
Cook Time: 15 Minutes
Servings: 3-4 (Macros calculated based on 4 servings)
Ingredients:
20 oz. Ground Turkey
3 Bell Peppers
1 Large Yellow Onion
1 Can Organic Black Beans
2 Tbps. Olive Oil
1 Pkg. Trader Joe's Taco Seasoning
Optional Add-Ons (Not Included in Macros):
1 Can Corn
1 Avocado (Sliced as Garnish)
1 Tbsp. Coconut Oil
Directions:
1. Wash and finely chop bell peppers and onions. Set aside while heating 1 tbsp. of olive oil in a sauté pan and 1 tbsp. olive oil in a second large pan. Make sure the second pan is large enough to eventually fit all the ingredients.
2. Add the onions to the sauté pan and ground turkey in the large pan. Once onions are golden, add the bell peppers and stir occasionally until tender. Stir in 1/3 of the taco seasoning.
3. After 1-2 minutes stir in 1/3 of the taco seasoning into the turkey.
4. Once the turkey is mostly cooked through, add in the black beans and stir in until thoroughly cooked. Then add in the onions and bell peppers. Stir in the remainder of the taco seasoning. Add cayenne to desired spice.
