Meal Prep Favorites: BBQ Pulled Chicken

BBQ Pulled Chicken is hands down my #1 favorite meal prep. Why? It's simple, easy and can mix and match with just about anything. Every Sunday I like to meal prep my lunches and snacks for the week. This helps me stay on track and it saves time later in the week. One of my go-to meal preps is BBQ Pulled Chicken. Usually I just make a huge batch and then add it to different meals throughout the week.

The Quick & Simple 'How-To' Make BBQ Pulled Chicken:

What You'll Need -

Uncooked Chicken

A Crockpot (or Instant Pot)

Water (or Chicken Broth)

2 Forks

Your Favorite BBQ Sauce

Salt

Step 1: Prep the crockpot. You can either cook the chicken on high for 2-3 hours or on low for 6-8 hours. Add 1 cup of water per pound of chicken and set the crockpot to your desired cook level.

Step 2: Clean chicken and add it to the crockpot. Then let it sit for the desired time.

Step 3: Drain the crockpot. Remove chicken and use two forks to shred and pull apart the chicken. The chicken will be easier to shred and more tender if cooked longer on low.

Step 4: Add the chicken, salt and your choice of BBQ sauce into the crockpot and let it all sit together for at least an hour.

Step 5: Remove BBQ Pulled Chicken and put it in a storage container. Make sure to let it cool before placing it in your fridge.

What can you add it to?

BBQ Chicken Salad - This is one of my staples. It's simple and full of micronutrients. I usually take 3-4 oz. of chicken and put it on top of spinach, bell peppers, red onions and my choice of dressing. It's very quick and makes a great lunch. See this one pictured below

BBQ Chicken with Zucchini & Onions - This is another one of my favorites and a great dinner option if you are trying to stay low-carb. Just bake the zucchini and onions at 400 F for about 25-30 minutes (shaking them up halfway through), add salt and pepper to taste and you have a full meal!

BBQ Chicken Sandwiches - Love carbs as much as I do? Add the BBQ chicken with your favorite bun and some veggies on the side and you have yourself a great summer dinner.
