Meal Prep Favorites: BBQ Chicken Salad
If you haven't noticed it yet, I love to meal prep! It gives me so much freedom throughout the week because I am not so focused on what I will be eating and tracking it, it's already figured out for me. One of my favorite simply tasty meals is a BBQ Chicken Salad. It's a great combination of protein, fats and even some carbs!
What You'll Need:
Spinach
Red Onion
Bell Peppers
Pulled Chicken
BBQ Sauce
Thousand Island or Ranch Dressing
How do I prep it?
Step 1 - Prep the chicken, bell peppers and onion on your main meal prep day.
Step 2 - Separate into labeled baggies. I make sure to write "Salads" on the baggies so no one else eats up my chopped veggies. The spinach I get makes 2 salads per bag, so I just leave that in the baggies.
Step 3 - After making the pulled chicken by following this recipe, I put a container into the fridge.
Step 4 - At lunchtime, heat 3-5 oz of chicken, mix in spinach, bell peppers and onions. Top with the dressing (up to 2 tablespoons) and enjoy!
Macros will depend on the dressing and BBQ sauce you use, but most of mine come out to about 260-310 calories, 25-31g protein, 20-25g carbs, and 10-14g fat.
