Macro-Conscious Recipe: Grilled Chicken Skewers
It's officially month 2 of my 60-day Macro Challenge! Last month I talked all about macros and how to make the most of them. This month I'll be sharing Macro-Conscious Recipes. What does that mean? Recipes with balanced macros in mind.
Fourth Recipe = Grilled Chicken Skewers

With summer right around the corner, we're enjoying doing some more grilling! These skewers did NOT disappoint. We paired them with air-fried french fries to add some carbs to the meal. I highly recommend Trader Joe's frozen fries. You can make them in the air fryer in about 16-18 minutes.
Prep Time = 15 minutes
Cook Time = 20 minutes
Serves = 2
What You'll Need:
16 oz. Chicken
1 Orange Bell Pepper
1 Yellow Bell Pepper
1 Yellow Onion
2 Tbsp. Olive Oil
2 Tbsp. Lemon Juice
1 Tbsp. Tomato Paste
1 Tbsp. Minced Garlic
2 Tsp. Curry Powder
1 Tsp. Cayenne
Instructions:
Marinate the chicken. Cut into 1 inch cubes and marinade with the Olive Oil, Lemon Juice, Tomato Paste, Garlic and Spices for at least 2 hours.
When ready to grill, wash and chop the veggies into 1.5 inch cubes/strips then alternate bell pepper, onion and chicken on metal skewers. If using wooden skewers, make sure to soak them overnight.
Grill for 10-15 minutes until cooked through and enjoy with your choice of sides!
