Self-Love Recipes: Red Thai Curry

In February, I like to celebrate self-love and practice anything and everything that celebrates loving oneself. This February I'm trying out 4 NEW recipes to love your body with! For starters, Red Thai Curry.
What makes this a recipe to love yourself with? It's healthy and incredibly comforting. Eating this made us feel warm and comforted.
What You'll Need:
3 Tbsp Coconut Oil
1 Onion
1 Red Bell Pepper
4 Medium (or 6-8 Small) Gold Potatoes
1 Cup Vegetable Broth
2 Cans Coconut Milk
1 Can Diced Tomatoes
1 Tbsp Tomato Paste
2 Tbsp Minced Garlic
1 1/2 Cups Sliced Carrots
1 Lime
Chicken (Optional)
Thai Basil Leaves
2 Cups Cooked White Rice
Instructions:
Wash and chop the veggies. Bite sized or smaller pieces are ideal.
Heat coconut oil over medium-high heat in a large skillet. Add the chopped onion and cook for 4-5 minutes.
Add bell pepper and potatoes and cook for 5-6 minutes.
Add the vegetable broth, coconut milk, tomatoes, tomato paste and garlic. Bring to a boil.
If adding chicken, add it in now and reduce heat to medium and simmer for 10 minutes.
Add carrots after simmering for 10 minutes (with or without the added chicken). Cook for another 5 minutes or until the vegetables are tender and potatoes easily pierced with a knife.
Add lime juice and salt.
Garnish with Thai Basil.
Serve with cooked rice and enjoy!
