'Tis the Season for Holiday Cookies

December is finally here! I love a lot of things about this time of year, one of which being the wonderful, yummy goodies. Last year we discovered these cake batter cookies and I'm OBSESSED! Talk about yummy.

When I first saw these, I KNEW I had to try them. Needless to say, I wasn't disappointed.

What You'll Need: 1 1/4 Cup Flour 1 1/4 Cup Yellow or Vanilla Boxed Cake Mix 1/2 Tsp. Baking Soda 1/2 Tsp. Salt 3/4 Cup Unsalted Butter 1/2 Cup Sugar 1/2 Cup Light Brown Sugar 1 Egg 1 1/2 Tsp. Pure Vanilla Extract 1 Cup Chocolate Chips 1/2 Cup Sprinkles Instructions:

  1. In a large bowl, combine the flour, cake mix and baking soda. Set aside.

  2. Using a Stand Mixer, beat the softened butter and both sugars on medium until creamy and smooth. Approximately 1 minute.

  3. Add the egg and mix until combined.

  4. Scape down the sides and add the vanilla. Beat on high until combined.

  5. Add the flour mixture slowly as the mixer mixes the batter on low. Adding in too fast and mixing at too a high a speed will cause the flour mixture to spill out of the bowl.

  6. Once combined, stir in the sprinkles and chocolate chips.

  7. Cover and chill for 1-2 hours.

  8. Line cookie sheets and preheat the oven to 350 degrees.

  9. Scoop rounded balls (approximately 1-1.5 inches) onto your cookie sheet and bake for 10-12 minutes.

  10. Allow the cookies to cook for 5-10 minutes before serving or transferring to a wire rack.
